The obvious choices for children would be either the beach near perhaps Port-la-Nouvelle or a trip into Carcassonne. St. Pierre des Champs is a bit remote but probably ideal for Cathar-related sight-seeing.

I might suggest a couple of forums where you could possibly pose questions and most likely receive some constructive answers:

Trip Advisor
Fodors

I recommend this sight for information about Languedoc:

Good day! I love the look of your blog, and was drawn here as I'm cramming to do some trip planning for a journey to a small village called Saint Pierre des-champs, where we'll be staying in a flat next week. We are an American family with two girls (2 and 4) stationed in Germany for a few months, on a sabbatical from work. I lived in Collioure many years ago, and did some traveling around this region, but not much...we intend to do some Cathar-related sight-seeing, but I'm concerned there won't be much to interest the kids. If you have any general advice, or other websites we might find useful I'd appreciate your assistance! Cheers, - Bill Pearse
